Fall and cold weather are upon us, so it’s time to head south for warmer waters. Kick your last BBQs up a notch with this Sweet Chili and Tequila Shrimp. It’s not too hot to send your guests running but has enough punch to make them ask for seconds.

Pan seared shrimp cooked with tequila and smothered in a sweet chili sauce will leave your taste buds wanting more. Another benefit, it's ready in a matter of minutes.

Ingredients

  • 1 lb 1 shrimp (peeled and deveined)

  • 3 cloves 3 minced garlic

  • 2 tbsp 2 olive oil

  • 1 tbsp 1 seafood seasoning of choice (or just salt / pepper)

  • 1 1 lime, juiced

  • 2 shots 2 tequila

  • 2 tbsp 2 sweet chili sauce

  • 2 tbsp 2 chopped cilantro

Directions

  • Add the shrimp, 1 tbsp olive, and seafood seasoning to a mixing bowl. Mix thoroughly and set aside.
  • Heat your grill to around 350 to 375 degrees F. Place a cast iron pan on the grill (or stove top) and add 1 tbsp olive oil. Once hot, add the garlic. Cook for 1 minute, stirring frequently.
  • Add your shrimp to the hot pan and sear for 1 to 1.5 minutes. Be sure that the shrimp are completely flat on the pan and not too close to the other shrimp.
  • Flip the shrimp over, add tequila, sweet chili sauce, and juice from one of the lime halves. Cook for roughly 1.5 minutes.
  • One the shrimp are done cooking, remove from the pan, top with juice from the other lime half, spread the cilantro over top, and dig in.
