Soy Glazed Chicken Thighs and Brussels

Pan seared chicken thighs smothered in a soy hot honey glaze and nestled in a pan of roasted brussels sprouts.

Ingredients

  • 4 4 chicken thighs, bone-in, skin-on

  • 1 lb 1 brussels sprouts, cut in half

  • 1.5 tbsp 1.5 salt

  • 1.5 tbsp 1.5 cracked black pepper

  • 1 tbsp 1 olive oil

  • 1 tbsp 1 sesame seeds

  • 2 tbsp 2 chopped leeks

  • Soy Hot Honey Glaze
  • 1 tbsp 1 toasted sesame oil

  • 2 tbsp 2 minced garlic

  • 1 tbsp 1 minced ginger

  • 1/2 cup 1/2 soy sauce

  • 1/2 1/2 lemon, juiced

  • 2 tbsp 2 hot honey

  • 2 tbsp 2 brown sugar

  • 1 tbsp 1 apple cider vinegar

  • 1 tbsp 1 sriracha

Directions

  • Heat a sauce pan on medium heat. Add the toasted sesame oil. Once hot, add the garlic / ginger and brown for roughly 2 minutes.
  • Add the soy sauce, lemon juice, hot honey, brown sugar, apple cider vinegar, and sriracha. Mix well, bring to a boil, and then simmer for roughly 10-15 minutes, or till desired thickness. Pour through a strainer and set aside.
  • Rub 1 tbsp salt and 1 tbsp pepper all over the chicken. Heat a large pan on medium heat. Add the olive oil and once hot, place the chicken skin side down. Cook for around 12 minutes.
  • Flip the chicken over and cook for 2 minutes. Remove the chicken from the pan and set aside.
  • Add the brussels to the same pan, add the salt / pepper, and then mix around around the pan soaking up any juices. Flip the brussels over (the cut side down) and cook for 4-5 minutes.
  • Turn off the heat, mix the brussels around with 1 tbsp leeks, and then place the chicken on top of the brussels (skin side up).
  • Heat your oven to 400 degrees F and place the pan of chicken and brussels in the oven. Cook for 5 minutes. Take out of the oven, add the glaze, and continue cooking for another 5-7 minutes, or until the chicken reaches an internal temperature of 165 degrees F internal.
  • Remove the pan from the oven, top with more glaze / sesame seeds / 1 tbsp leeks, serve up, and dig in.
