  • Don’t worry getting any coal on the steaks. It’s perfectly ok with lump coal. Just brush off any pieces that may have stuck to the steaks.
  • Wait until the coals have mostly grayed over before placing the steaks on them. They need to be very hot for this to work well. Just keep an eye on them when searing. You can rotate or flip depending on how the sear is going.
  • I will admit, cooking this way is more fun than anything. Have some friends over and finish your steaks this way. You’ll definitely get some interesting commentary.

Sirloin filets reverse seared over the hot coals.

Ingredients

  • 2 2 sirloin filets

  • 1 tbsp 1 olive oil

  • 2 tbsp 2 steak seasoning of choice

Directions

  • Rub olive oil all over the filets and coat with the steak seasoning.
  • Heat your charcoal grill to 225 degrees F indirect. Add a wood chunk of your choice. I prefer apple or pecan. Add the steaks and cook until the internal temp reaches 110 degrees F. Remove from the grill.
  • Heat your grill to 600 degrees F and then set both filets on the coals. Cook for 1 to 1.5 minutes and then flip. Cook for another 1 minute, or until your desired doneness. I prefer 125-130 degrees F, but it's up to you if you would like it cooked a little more.
  • Remove from the grill and let rest for roughly 10 minutes. Cut into slices and dig in.
