A recipe for the bold! Neither Panko nor Doritos are gluten-free, but only Doritos has an explosion of flavor that will leave you gasping for breath (in a good way, not like that time with Uncle Bob). Try this Doritos Salmon Challenge next grill out and you won’t be dissapointed.

Tips / Suggestions

  • I prefer to cook salmon to 125 degrees F internal for farm raised. If it’s wild caught I would go to 120 degrees F internal. Either way, cook to your desired doneness.
  • If you don’t have a small torch of some kind to char the planks, just soak them in water for 1 hour, and then place them over the grill, flipping until you get a good char on both sides.
  • It’s much easier to use the planks as a serving dish. Sometimes I run into issues when trying to remove from the plank and place on a plate, as it can fall apart or stick to the wood.

Delicious cedar planked salmon topped with a crust of Doritos Nacho Cheese and Cool Ranch, and smothered with a creamy avocado sauce. Take a vote on which flavor you love the most.

Ingredients

  • 1 1 salmon filet cut into portions (skin on)

  • 1 cup 1 Doritos Nacho Cheese

  • 1 cup 1 Doritos Cool Ranch

  • 2 tbsp 2 dijon mustard

  • 1 tsp 1 salt

  • 1 tsp 1 pepper

  • Avocado Sauce
  • 2 2 avocados peeled and seeds removed

  • 1 handful 1 cilantro

  • 1/4 cup 1/4 sour cream

  • 3 3 limes juiced

  • 1 tsp 1 salt

  • 1 tsp 1 pepper

  • 1 tsp 1 red pepper flakes

Directions

  • Take each Dorito flavor, add to a blender separately, and blend till crushed. Set aside both flavors.
  • Take all of the avocado sauce ingredients and blend till creamy. Pour into a sauce bottle and set aside.
  • Take 1 or 2 cedar planks (depending on how large they are) and torch both sides until they are charred. Take the salmon filet and cut into equal portions. Place each portion on the charred cedar plank(s). Rub the mustard over top and then dust with the salt / pepper. Then, spread the crushed Doritos evenly on top of each filet. One plank for the Nacho Cheese and one plank for the Cool Ranch.
  • Heat your grill to 400 degrees F. Add the planked salmon to the grill and cook for roughly 20 minutes, or until the internal temperature of the salmon reaches 125 degrees F.
  • Remove the salmon from the grill, top with the avocado sauce, and dig in.
