Tips / Suggestions

  • I used feta in this recipe (which isn’t typical), although feel free to use any cheese you like. I love feta and was surprised by how good this combination was.
  • I didn’t skewer the corn before I grilled, although it’s easier to do so. Then you don’t need tongs to rotate or remove the corn from the grill.
  • Another great way to do this recipe is to grill the corn, remove from the cob, and mix together with the cheese mixture in a bowl. You can use it as a topping on chicken or just eat by itself.

Elote (Mexican Style Street Corn)

Grilled corn smothered in an elote style sauce with feta cheese.


  • 2 ears 2 corn (shucked)

  • 1 1 lime (cut in half)

  • Elote Sauce
  • 1/8 cup 1/8 mayonaise

  • 3 tbsp 3 BBQ seasoning of choice

  • 1/2 tbsp 1/2 minced garlic

  • 1 tbsp 1 hot sauce

  • 1/4 cup 1/4 crumbled feta cheese

  • 1/8 cup 1/8 sour cream

  • 2 tbsp 2 chopped cilantro


  • Heat your grill to 375 direct. Place the corn on the grill for roughly 8-10 minutes, rotating every 2 minutes. When the corn has some char all the way around your done.
  • Mix together the sour cream, mayo, garlic, 2 tbsp of the seasoning, hot sauce, most of the cilantro, and 1/2 of the feta cheese.
  • Skewer the corn and then smother with the cheesy sauce. Top with the rest of the feta, 1 tbsp of the seasoning, remaining cilantro, lime juice, and dig in.
