Feta Smash Burgers w/ Pesto Truffle Mayo

Tips / Suggestions

  • Always be sure to use parchment paper when smashing burgers. This will prevent the meat from sticking to the burger press or whatever tool you are using.
  • When smashing the burgers, round the edges almost completely flat. This will give you a crispy edge which elevates the burgers even more.
  • Feel free to substitute any cheese you want (in case you don’t like feta) to mix in with the burgers. It’s fun to experiment with cheese combinations and see what you like the best.

Feta Smash Burgers w/ Pesto Truffle Mayo

Feta filled smash burgers topped with mozzarella, caramelized onions, and a pesto truffle mayo.


  • 1 lb 1 ground beef 80/20

  • 2 tbsp 2 crumbled feta

  • 2 2 hamburger buns

  • 1 cup 1 onions chopped

  • 3 tbsp 3 beef seasoning

  • 1 cup 1 mozzarella shredded

  • 1/2 cup 1/2 arugula

  • 2 tbsp 2 butter

  • Pesto Truffle Mayo
  • 2 tbsp 2 pesto

  • 1 tsp 1 truffle oil

  • 4 tbsp 4 mayo


  • Combine the seasoning, feta, and ground beef. Mix thoroughly. Roll the mixed beef into large meatballs.
  • Heat grill to 400 degrees, using a sear plate (or a griddle). Throw the butter, onions, and 1 tbsp seasoning on the plate for them to caramelize (toss occasionally while cooking the burgers).
  • Add the meatballs to the hot sear plate and smash until they are flat. If you don’t have a tool to do this, just wrap a spatula in parchment paper.
  • After 3 minutes or so, flip the burgers, and add mozzarella to each patty. Close the lid so the mozzarella can melt. After another 3-4 remove from the grill. Toast the buns for 1 minute on the plate while the burgers are set to the side.
  • Coat the bottom bun with the mayo, top with arugula, then the burgers (2 patty’s if you dare), top with the caramelized onions, and dig in.
