Peach Teriyaki Shrimp Skewers

Sweet as a Georgia peach. These Peach Teriyaki Shrimp Skewers render the opposite feeling of having to bail out a University of Georgia player after his 5th DUI.

Tips / Suggestions

  • Ideally, if you’re using wooden skewers, you should soak them in water for an hour or so. Usually I forget about this and just run them under water for a little bit.
  • Another great way to do the sauce is to grill the peaches with a little oil / seasoning and throw those in the blender. Just take them off when they have some nice grill marks and remove the skin.
  • If you don’t have a surface to cook the shrimp, just grill them over direct heat on the grates for roughly the same time. Just wait to apply the sauce after they’re done cooking.

Seared shrimp skewers bathed in a delicious peach teriyaki sauce and topped with sesame seeds / green onions.

Ingredients

  • 2 lbs 2 shrimp (peeled / deveined)

  • 2 tbsp 2 olive oil

  • 3 tbsp 3 seafood seasoning of choice

  • 1 tbsp 1 sesame seeds

  • 2 tbsp 2 green onion (green end) chopped

  • Peach Teriyaki Sauce
  • 3 cloves 3 garlic

  • 2 tbsp 2 toasted sesame oil

  • 2 tbsp 2 brown sugar

  • 2 tbsp 2 olive oil

  • 1 cup 1 soy sauce

  • 2 tbsp 2 peach preserves

  • 1 tbsp 1 sriracha

  • 2 tbsp 2 ginger chopped

  • 2 tbsp 2 green onion (white end) chopped

Directions

  • Place the shrimp into a mixing bowl. Add the olive oil and seafood seasoning. Mix well.
  • Take the shrimp and skewer them until each skewer is full. Set aside. You want to leave enough of the skewer on each end to allow for picking them up. I was able to fit all 2 lbs of shrimp all on 4 typicial wooden skewers.
  • Combine all of the sauce ingredients into a blender and blend until it becomes a liquid.
  • Heat your grill (with a cast iron surface or soapstone) to 400 degrees F. Add 2 tbsp olive oil and spread evenly around the surface.
  • Place each shrimp skewer on the heated surface and cook for 2-3 minutes. Flip and repeat on the other side for another 2-3 minutes.
  • Flip the shrimp one last time and pour the peach teriyaki sauce over top. Cook for another minutes or so until the shrimp are cooked through.
  • Remove the shrimp from the grill, top with sesame seeds / green onions, and dig in.
